It is such a wonderful feeling when something actually works out right the first time!! I just had my first glass of Homemade Kefir and it tastes wonderful! The benefits of this fermented drink have been extolled throughout the centuries. Some say Kefir lowers blood pressure, reduces serum cholesterol, contains anti oxidant properties, helps to heal the digestive tract, is wonderful to help those with GERD or acid reflux, and even aids in weight loss!
I guess I've come a long way from my childhood when I couldn't stand the warm buttermilk that my mother would drink, yuk! But Kefir this Kefir is not as sour as buttermilk, although if left to ferment longer I have read it does have a stronger taste. I am trying for a mild flavor that my husband would prefer. Now that I've had success in making the basic Kefir, I will be experimenting with recipes. I am planning on handing out the instructions and recipes at the Home Food Preservation and Frugality Workshop that are scheduled for this summer.
